Palazzo Fiuggi: Luxury spa hotel with cuisine from Rome’s most decorated chef

Palazzo Fiuggi Luxury Spa Resort is located 80 km from Rome. Built in 1913, this Art Nouveau palace became Europe’s first hotel with a swimming pool.
Today, after a complete renovation, the hotel is reopened to guests. The 102 rooms with views of the city and the park are immaculately decorated: Carrara marble, original parquet, modern furniture, frescoes and sophisticated decorative elements. The interiors are complemented by Art Nouveau windows and Murano glass chandeliers.
Fiuggi, where the hotel is located, is one of the most famous drinking resorts in Italy. The city is surrounded by picturesque forests, olive groves and vineyards. The climate is mild, with warm winters and hot summers. The main therapeutic factor is the unique cold mineral water with low mineralization, which has no analogues in the world.
Research by La Sapienza University in Rome has shown that the secret of Fiuggi water lies in the content of fulvic acid. This organic molecule softens and destroys stones and sand in the kidneys, promoting their excretion. With a 15-day course, pain and swelling decrease and uric acid salts are eliminated. The drinking course is also effective in the treatment of osteoporosis, arthritis, rehabilitation after chemotherapy and radiotherapy, taking antibiotics, it is used for detoxification, strengthening the immune system and in the treatment of obesity and cellulite.
Palazzo Fiuggi Kitchen: a wellness tool from Heinz Beck
Palazzo Fiuggi’s cuisine combines refined gastronomy with the principles of healthy eating, aiming at restoring strength while harmonizing body and mind.
The Food Line concept is overseen by chef Heinz Beck, one of the most decorated chefs in Europe, known for his scientific approach to gastronomy and for receiving three Michelin stars. Beck is a staunch advocate of naturopathy and a pioneer of the philosophy of Food as Medicine, where every dish becomes part of a wellness program. Together with Professor David della Morte Kanoski, an expert in geriatrics and molecular medicine, he developed a personalized nutrition system based on scientific research.
As in his Beachcomber project (at Forte Village resort, Sardinia), Beck creates a menu where food is not just a taste and aesthetics, but a health tool. At Palazzo Fiuggi, this approach is expressed through individual nutrition programs.
German by birth and Roman by choice – that’s what Heinz Beck says about himself. “You can’t choose where to be born, but you can choose where to live. And I think my choice turned out to be surprisingly successful,” says Beck. He is the only chef whose restaurant in Rome – the legendary La Pergola on the top floor of the Rome Cavalieri Hotel, A Waldorf Astoria Hotel – has been awarded three Michelin stars.
Opened in 1994, La Pergola restaurant has become an icon of haute cuisine in Italy. Last year, after three decades of continuous operation, the restaurant underwent a large-scale but finely tuned renovation.
“We drew inspiration from Rome itself – its light, materials, history,” explains Beck. “Everything in the interior – from designer chairs to unique vases handmade by a Trastevere craftsman – was created exclusively for La Pergola. Every element of the interior is a tribute to the Great Beauty of Rome, a city that I fell in love with immediately. In the 1980s, when I first arrived, I loved riding a Vespa through the small streets in the center.” And the menu reflects all the talent and philosophy that always permeate the work of Heinz Beck. His culinary approach is based on the principles of health, well-being and circular cuisine, where 100% of raw materials are used: each ingredient finds its place and waste is minimized.
“The secret of modern cuisine, based on increasingly sophisticated technologies and biodynamic or regenerative products, is not in recycling, but in the complete absence of waste,” Beck emphasizes.
Among the dishes dedicated to Rome are the exquisite Sanpietrino, filled with an airy cloud of tomatoes, and Mattonella della Via Appia, a bean “tile” served with tender lamb. The restaurant’s menu is constantly evolving, remaining a living reflection of the chef’s ideas and inspiration. It is regularly complemented by outstanding wines from the legendary wine cellar, which this year was again recognized by Wine Spectator magazine as one of the best in the world.
